This is my go-to recipe for a nice burger.
I've tried lots of different vegan burgers and portobello burgers
and this one is hands down my all time favorite.
It never lets me down.
No, they do not taste just like a beef burger
(ugh, I had a hard time even typing that word),
but mushrooms are a great beef substitute
because they are meaty and this recipe makes them juicy!
Also, you won't feel heavy and overly full after you eat these.
This recipe comes from Rachel Ray.
She serves the burgers with a roasted pepper spread.
I don't have time to make that. So here is my version.
First, I want to tell you that the marinade
is what makes these burgers great.
And what makes the marinade is the steak seasoning.
I have steak seasoning from The Spice Hunter,
but any brand would do.
This blend has black pepper, garlic, onion,
brown mustard seeds, lemon peel, chile pepper,
allspice, coriander, marjoram and oregano.
Pour balsamic vinegar, extra-virgin olive oil,
Worcestershire sauce, rosemary,
steak seasoning and mushrooms
into a plastic baggie
and shake to get those mushrooms well coated.
Put them in a non-stick skillet over medium high heat
and flatten them with your spatula.
Cook on each side for about 3-5 minutes.
Toast your rolls. We got kind of small rolls this time,
so we ended up having to cut our burgers down to size.
And now I'd like to introduce you to my favorite vegan alternative,
Vegenaise! This stuff is so good!
Spread vegenaise on both sides of your toasted rolls
and put some avocado slices on the top bun.
I'm so lucky.
My husband is growing fresh tomatoes in our garden.
Put a couple slices on top of those avocados.
We also have a basil plant!
A dream come true for me.
Add a few basil leaves on those
tomatoes and top it off with lettuce.
There it is! My fat little burger!
You can get bigger buns to have a fat big burger.
So good! We have a new ritual of making these
every Sunday afternoon. I love our new ritual.

These portobello burgers look delicious! What a great idea for the seasoning. Looks like BBQ is back on the menu for this chickpea!
